Blueberry Oatmeal Crumble Bars

Ingredients for the base and crumble topping:
- 1 cup all purpose flour or whole wheat pastry flour
- ¾ cup old-fashioned oats
- ½ cup granulated sugar
- ¼ cup packed brown sugar
- ½ tsp cinnamon
- ¼ tsp salt
- ½ cup unsalted butter that is melted
- 1 large egg yolk
- 1 tbsp packed brown sugar
Ingredients for the base and crumble topping:
- 2 cups fresh blueberries
- 2 tablespoon fresh lemon juice
- 1/4 cup granulated sugar
- 2 teaspoon cornstarch
Directions:
Preheat oven to 350 degrees. Line an 8 x 8 baking pan with aluminum foil and grease with non-stick cooking spray.
In a medium bowl, whisk together the flour, oatmeal, sugars (from the base/topping), cinnamon, and salt. Gently stir in the melted butter and egg yolk.
Remove 2 cup of the mixture.
Press the remaining mixture into the bottom of the prepared pan.
In the medium bowl, mix together all the ingredients of the blueberry layer. Spoon over the base oatmeal mixture in the pan.
To the reserved cup of oatmeal mixture, stir in the 1 additional tbsp of brown sugar over the top of the blueberry layer. Crumble the mixture in your hand and sprinkle on top of the blueberry layer.
Bake in the oven for 40-45min, until the berries are bubbling and the top crumble turns golden brown.
Allow to cool fully to room temperature (at least 3hrs) before cutting the bars with a sharp knife
