Kale, Pesto, and Sausage Strata

Wow your mom with this delicious in season breakfast strata on Mother’s day!
Ingredients
- 1 loaf sourdough boule
- 10oz browned breakfast sausage, sliced into bite-sized pieces
- 1 kale bunch, washed and chopped into bite sized pieces
- 4 minced garlic cloves
- 3tbsp oil
- 15 eggs
- 1.5 cups whole milk
- 130g pesto
- 1tbsp Dijon mustard
- 1 tsp salt
- ½ cup grated pecorino Romano cheese
- 2 cups shredded extra sharp cheddar cheese
Directions
- Preheat oven to 375 degrees. Chop and rip bread into 1” cubes and set aside
- In a large pot, heat oil over medium-high heat. Add sausage and fry until golden brown on each side. Add garlic and kale. Cook down until kale has reduced down completely.
- Remove from pan and spread kale and sausage onto a large sheet to cool completely while you prepare the rest.
- In a large bowl, whisk eggs, milk, pesto, and salt. Set aside
- Create an assembly line of bread, sausage/kale mixture, both cheeses, and egg mixture
- Butter the baking dish
- A deep baking dish will need 3 layers and a shallow dish will need 2 layers. Layer the bread, then the kale and sausage, next the pecorino and cheddar. Repeat until everything except the eggs and 1/3 of the cheddar is used up. Then slowly pour the egg mixture over top and garnish with remaining cheddar
- Cover with foil and bake 30-45min. Remove the foil and then change to broil and cook uncovered until the cheese is browned and bubbly with crispy edges, another 15-20min.
- Let rest 5min before serving and enjoy hot!
