Texas Caviar Dip

Recipe From Living Sweet Moments
Gluten-free, vegan, healthy, and better than salsa! To make it healthier, add chunks of avocado too!
Produce:
1 can black beans
1 can black-eyed peas
¼ cup cilantro
1 cup corn
½ English cucumber
1 garlic clove
2 green onions
1 jalapeno pepper
Freshly squeezed juice from 1 lime
¼ cup red onion
1 cup tomatoes
Seasonings:
Salt
Pepper
2 tbsp apple cider vinegar or red wine vinegar
2 tbsp olive oil
Mix together, and enjoy as an alternative to salsa with multigrain tortilla chips!
