French Lentil Salad
This salad boasts a firm texture with a tangy, savory depth from the mustard and vinegar. Try serving it
over a bed of arugula or alongside grilled chicken for a complete meal!
Ingredients
– French lentils – 1 cup
– Water – 4 cups
– Salt – ½ tsp
– Red wine vinegar – 2 tbsp
– Olive oil – 3 tbsp
– Dijon mustard – 1 tsp
– Red onion – ¼ cup, finely diced
– Fresh parsley – 2 tbsp, chopped
Instructions
- Rinse 1 cup of French lentils under cold water in a fine-mesh strainer to remove any debris.
- In a medium saucepan, combine the rinsed lentils, 4 cups of water, and ½ tsp salt.
- Bring the mixture to a boil over high heat, then reduce the heat to low and simmer uncovered for 20–25
minutes, until the lentils are tender but not falling apart. - Drain the lentils in the strainer and spread them on a baking sheet to cool completely to room
temperature, which helps prevent sogginess. - In a small bowl, whisk together 2 tbsp red wine vinegar, 3 tbsp olive oil, and 1 tsp Dijon mustard until
emulsified. - Place the cooled lentils in a large mixing bowl and add ¼ cup finely diced red onion and 2 tbsp
chopped fresh parsley. - Pour the dressing over the lentil mixture and toss gently to coat everything evenly.
- Let the salad sit for at least 10 minutes before serving to allow the flavors to meld.
