Piña Colada Zucchini Bread

Ingredients
- 3 cups grated raw zucchini
- 3 cups sugar
- 1.5 cups oil
- 4 eggs
- 4 cups of flour
- 2 tsp baking powder
- 1.5 tsp salt
- ½ cup nuts
- 1 tsp baking soda
- 1 cup crushed pineapple, drained
- 1 tsp vanilla
- 1 tsp coconut flavoring
- 1 tsp rum flavoring
Directions
Mix the first 4 ingredients and beat 2 minutes. Sift flour, baking powder, salt, and soda. Mix and then add the remaining ingredients. Baked in greased and floured loaf pans for 55 minutes at 350 deg F. Makes 3 loaves.
